Week 4: Fruit Leathers.

This week we're also done with our fourth experiment
which is.....

Fruit Leather



Before start....
we had a short brief and each group is given a different type of fruit
to do the fruit leather.

The basic formula of Fruit Leather
Ingredients:

2 1/2 cup               Strawberries, hulled and cut in half.
25 g                       Sugar

Method:

  1. Puree strawberries in blender until smooth.
  2. Stir in the sugar.
  3. Line baking tray with parchment paper.
  4. Spread the fruit evenly in the tray.
  5. Dry in oven at 248⁰F (120⁰C) until completely dry and no longer sticky (approximately 3 1/2 hours).
  6. Remove from baking tray and roll up.
  7. Wrap the roll tightly in aluminium foil and store at room temperature in a tightly closed plastic bag or container.
Note: Apple leather can be made using 1 1/2 lb of apples (peeled, cored and pureed), 90 ml water,75 g sugar and 0.8 g cinnamon.


Tasks:
  1. Control - Prepare the basic formula. Note the time required to dry.
  2. Honey, 248⁰ F (120⁰C) oven - Prepare the basic formula, but substitute 30 ml honey for the sugar. Dry in oven at 248⁰F. Note the time required to dry.
